Tekken 3: IMO, along with Tekken Tag Tournament, the best iteration of the Tekken series, beating out the later versions of the game in terms of controls and responsiveness. It's "all killer and no filler", and doesn't suffer from the mind-numbingly redundant and uninspired characters that would plague later editions of the game.
Tenchu: Stealth Assassins: As with Tekken 3 above, the limited horsepower of the original Playstation had the positive effect of reining in game design excesses that would appear in PS2 (and later) sequels to the game. One of my favourite action games of all time. Metal Gear Solid: Not really a fan but every one else I know swears by it, so I'll recommend it anyway. Syphon Filter: While everybody was playing Metal Gear Solid, this was the military-themed espionage game that I was really getting into. Less refined (the writing is pretty generic, nothing like MGS' creatively surreal dialogue and plot) but much much more action-oriented than MGS. A word of warning: don't get the sequel, it's pretty mediocre, even by PSone standards. Silent Hill: The best survival-horror game on the platform, bar none. X-Com is a great turn based game, but it is high as hell if you find a copy.

Everybody mentions that game; I regret not ever trying it.

There are 3 games i can't stop playing.
They have so many hidden stuff, so many details, and several ways to finish them that two runs of the same game can be different. They still hold their ground today. Catlevania Symphony of the Night Valkyrie Profile Final Fantasy Tactics.

If you like FF tactics, you would probably like Vanguard Bandits. Its basically FF tactics with Mecha.
