Obviously, anything in ANH is kinda meaningless now because Lucas has long retconned it all. Vader and Anakin were literally two different characters in his mind in ANH. Tarkin mentions Vader being all that is left of that ancient religion...despite Tarkin later seeing Jedi aplenty right up to ANH, with Lucas himself having Jedi like Ahsoka survive the Clone Wars into the OT.

But that's always the case with Star wars. It's a mess. Remember in TFA Rey and Finn surprised Jedi and the Force exist...despite Finn literally working under Kylo Ren and the Jedi having been wrecked only a couple years before TFA? or Finn's THEY FLY NOW despite everything showing Imperials flying for decades.

Yes. So, there is no other mention of the "Clone Wars" canonically other than a New Hope? I feel like other media calls it other things in-story
