First I would take the original DS playset concept and expand on it. Imagine a pie cut in four equal pieces lettered A - D. Each slice represents a section of the Death Star and each has three stories. The sections would also have removable panels that resemble the Death Star's external surface so that when the sections are combined, you'd have an enclosed sphere. Below is a detailed description of the interior. Slice A Level 1 - "Trash Compactor" with moving walls, cell door, garbage pieces and Dianoga monster. Level 2 - "Detention Center" with communications console, security cameras, cell blocks and corridor with "blowaway" escape chute that leads into trash compactor below. Level 3 - "Command Center" where Grand Moff Tarkin demonstrates the power of the Death Star and the destruction of Alderaan to Princess Leia. Slice B Level 1 - "Retractable Bridge" where Luke and Leia lock the blast shield door and swing to safety. Level 2 - "Second Level Bridge" where stormtroopers fire down at Luke and Leia. Level 3 - "Tractor Beam Bridge" where Ben disables the Death Star's magnetic grip on the Falcon. Immediately underneath this bridge is the section where Luke sets his grappling hook. Slice C Level 1 - "Docking Bay 327" where Ben and Vader duel to the death. Level 2 - "Gantry Station" where Pol Treidum asks, "TK-421, why aren't you at your post?" and R2-D2 later discovers Leia's scheduled execution. Level 3 - "Briefing Room" where Vader chokes the insolent Admiral Motti. Slice D Level 1 - "Gunnery Station" where Imperial Gunners fire the Death Star's massive laser cannon. Level 2 - "Throne Room" where Luke and Vader fight under the Emperor's dais. On this level is the elevator and bridge where Vader dispatches the Emperor. Level 3 - "Emperor's Dais" where the Emperor's throne overlooks the Battle of Endor. What do you think? Did I miss anything? But you are going to have to build it yourself, Since Hasbro is conservative when it comes to large playsets.

Yes, I imagined the lower bridge being near the top of level 1 so there was some space for an imaginary chasm below it. The bottom levels could also be a little taller than the upper levels.

When I was a kid, the Death Star Playset was one of my ultimate dream toys. I owned one several years later for about one week. (my best friend sold me his and it became a GI Joe base until his mom demanded that he get it back). I always imagined taking several of the playsets and creating a fully round Death Star exactly as you've described.
