is there any way to cancel an item you have listed on ebay once someone has placed a bid on it?
is there a way add a buy it now once someone has placed a bid on it?

I believe "yes" to the first question and "no" to the second. And if you cancel the item, you still have to pay eBay listing fees.

Yes edit the auction to say no longer for sale or For sale empty envelope full of air. ..or you used to be able to cancel all bids and then pull the auction. Or just email the bidder and ask them to cancel the bid as the item is no longer for sale, then close it. Not sure though as I have stayd away from that site for buying and selling for years.
