Here's my list.. a little old school for some of these titles, but worth it all the way.
8 man after (great action) Ninja Scroll (action with a little comedy) Wicked City (Awesome story line) Outlaw Star (Someone else also mentioned this) Riding Bean (Again was already mentioned, but a little trivia about it. The character was actually derived in the Gunsmith Cats Comics, which in turn they got their own anime, so they decided to make an anime with his character as well.) The Lensman (interesting story line and some comedy.) Bleach (Awesome characters, action, and a good story line) Fist of the North Star (Great action!!) Macross Plus (Good follow up to the original Macross) Vampire Hunter D (A must see... period) VHD: Bloodlust isn't bad, but not as good as the original. Ranma 1/2 is funny.. more bubblegum anime. But still good. Ghost in the Shell (The original is still better than any of the follow ups.) I'm sure I can think of more.. but this is a good list to start with.

If you liked Claymore, check out Elfen Lied. Totally wicked anime. Dont forget to see Hajime No Ippo as well. It has great characters with laugh out loud comedy combinded with intense boxing action.
