Ooooh, I need to make burgers! What's your recipe?
I mix up the beef with salt, pepper, garlic, a bit of sriracha, a dollop of barbecue sauce (or a few teaspoons of sugar if I'm out out) and a couple tablespoons of dried minced onion. I used to dice up my own onions and saute them before adding, but the dried stuff rehydrates perfectly and works just as well so I'm happy to save myself 10 minutes of work and some dishes. If I'm feeling fancy I'll throw some shredded cheese into the center of the patties before throwing them on the rack and baking them. Yeah, I bake them. 20 minutes at 400 degrees with a flip for the last 5 minutes is perfect, and since I bake on a cooling rack all the excess grease drips right off into the pan yet they don't get dry (that's what the flip is for; I used to have to add a pat of butter to keep them from drying out, but that flip helps keep a layer of oil on the topside) and then a slice of cheese after the oven's been shut off. Toasted bun with a little bit of mayo as an oil barrier to keep the patty from getting the bun soggy, condiments, and it's all good. When it comes to cooking there are a million things I defer to my mom on, but I can make truly righteous burgers. When my neighbors are grilling during the summer, I throw on some onion rings and BBQ sauce so I don't feel like I'm missing out and it's absolutely glorious. And then I wonder why I've put on 15 pounds since quarantine started....

Very true. I've eaten "fresh" ground beef from Walmart, HEB, Kroger, Albertsons, Safeway, and grocery stores. Their ground beef has a rubbery texture to it. But real authentic fresh ground beef, there's nothing like it.

That burger looks pretty damn good sbartek!
I just season burgers heavy with onion powder and Worcestershire sauce, usually while the other side's frying in the pan. I save the fancy stuff for pork tenderloin and roasted chicken. I might have to give that seasoning a try though. |

What else went shitty while I was camping? Also, I use worcestershire sauce, liquid smoke and garlic salt on my burgers and steaks. I picked that up from my pop, who died 3 years ago (the man raised a couple of calves to heifer for a few years just for the fresh beef...he'd name 'em shit like "Pot Roast" and "Porterhouse"), so meat and meat seasoning talk always makes me a bit sad...which brings us back to Barty's mom. I hope you and yours are dealing as best as possible.
