I'm not a huge fan of Snake Eyes, but I gotta admit this is one of those special missions he's so good at.
so Snake Eyes is a must, a lot of folks will say there are other ninjas like Jinx or Kamikura...
Snake Eyes is the best for this job.
Duke would be busy dealing with whatever mess Cobra would be concocting...
So Flint will lead this team.
and you cant have Flint without Lady Jaye....
Spirit would be good here since he's a tracker. so he's in.
Stalker would be second in command for obvious reasons...
and lets throw Gungho in there for good measures.

Beachhead (team leader)
Recondo (need you ask?)
Bazooka (firepower, and the color of his outfit actually won't make him a target in this case)
Jinx (actually fights best against what she can't see)
Falcon (call me crazy, I have a feeling it would actually come down to Falcon against the beast one on one, and if he can take on Nemesis Enforcer, he could probably pull it off)

Snake Eyes: Pretty much every media makes this guy invincible. You could probably drop him into the jungle alone, and you predator troubles will be over. I find ninjas overrated, but he's also a commando, so he can still do some damage.
Stalker: This is your team leader. He's one of the most experienced commandos the Joes have, and he knows jungle warfare.
Roadblock: We've seen the Predator shake off a 7.62 round. Let's see how well it does against a 50. cal from a ma deuce.
Spirit: Best tracker on the Joe team. Can beat up ninjas.
Gung Ho: Crazy enough to go hand to hand against the Predator, stubborn enough to win. Unlike Leatherneck, he won't take a trophy, and insist upon carrying it everywhere with him.
Few random greenshirts: Somebody has to be killed, and their skinned/beheaded bodies left for the others to find, so that they know this thing means business. And, we can't go killing named characters, now can we.

Gung Ho, Stalker, Spirit, Snake Eyes, Flint, Psyche Out, Roadblock,...and for bait the Fridge. It's going to take a while for the Predator to figure out what the Fridge is due to the enormous heat profile, and then he has to figure out if its dangerous and by then the guys move in for the kill.

I would use a jungle recon team. Stalker as team leader.
M203 or equal..Beach Head
Saw-Rock and Roll
All these guys are in excellent shape, not too bulky, or too heavy to carry equipment, they are fast movers and streamline. These guys would be able to adapt to heat, excell in heavily wooded and jungle areas. Stalker excellent leader with much experience from Nam. Too easy
