I'd rather have the pizza, but Rooster Bizkits it is...Recipe for when you're feeling like some rooster:
3x Cans of canned chicken breast (or 1 lb chicken breast,baked then shredded w/food processor) 2x eggs 1/2 onion, chopped fine/minced 1/2 cup corn 1 cup oatmeal (run through a food processor to until at desired consistency...i like mine in tiny pieces) 1tsp garlic 1tbsp Sriracha "rooster sauce" mix all ingredients well in bowl, grab small chunks and roll into meatball size/shape. Flatten into patty. Place all patties on non-stick cookie sheet. Bake @ 375 for 10-12 minutes (or until browned to your liking) you can sub the vegetables out or eliminate entirely. You can sub breadcrumbs or crushed crackers for the oats. It will taste better but be less nutritionally useful. |
