Some people drink or do drugs to escape reality. Me? I just happen to collect action figures. Why G.I.Joe? Pretty much nostalgia. Star Wars and G.I.Joe were the only toys I played with as a kid. I never played with Transformers. Why spend $5 on a Transformer when you can get 3 Joes or a small vehicle for that much? I never played with He-Man either.
So for me, it's either do drugs or collect action figures. Sometimes I think doing drugs would be cheaper!
Looking for at reasonable prices:

I'm in the same boat as FREEDOM......I loved it as a kid and I love it now. Yeah, the articulation and price sucks, but it's close enough for me. I gave away my ARAH stuff in 1988 (it was all complete and mint too) and it's been a thorn in my side for 20 years. This is my chance to re-start, re-build, re-launch my collection. Plus my son is starting to express a interest so that's cool too. Did I mention I'm a Star Wars junkie as well? Hey FREEDOM....that's all I played with as a kid too......I did dabble with the Super Powers figures, but by that time I was getting older and "too cool" for toys and my action figure days came to an end in 1985.

There's not really just one answer to the question posed by the original poster. I love GI Joe for a number of reasons.
First of all, let's get the whole nostalgia thing out of the way. It definitely plays a part in the appeal for me, but only a small part at best. The other reasons (see below) eclipse nostalgia.
With me, it was all about the comics. It was my first introduction to RAH and it all began with issue #2 of the Marvel series. I fell in love with it immediately and anxiously awaited the next issue. And the issue after that. And the issue after that. And the... well, you get the idea.
The plotlines and characterization kept me involved. Whereas most comics of the era had story plots with a beginning and an end, the Joe plots were continuous. It felt like the chronicling of these people's lives and that intrigued me. Add to that the interesting characters that the comic featured (especially from '83 to '86) and there was no way that I couldn't be hooked. To be fair, I still feel as excited about reading the comics, both old and new alike. I enjoy visiting my old friends on the Joe team (and Cobra too, of course). I grew up with these fine folks and they grew up with me as well. I relate to them and I'm always interested to see what they're up to. It's not a nostalgia thing in this case; it's more like a friendship. A creepy, oddball friendship, I guess. But a friendship nonetheless.
When the cartoon came out, I have to admit, I was not pleased. At all. In fact, I recall being outright angry. Most of the elements that I loved about GI Joe were stripped away or downplayed. Plus, the cartoon emphasized characters that I couldn't stand. Still, I was able to ignore the cartoon and maintain my love of GI Joe.
Another reason I love GI Joe is the action figure line. I adore toys, period. From Strawberry Shortcake to Masters of the Universe, I love them. GI Joe just happens to be my favorite of the lot. They are small enough that I can collect a bunch of them and keep them in a small space. And unlike Star Wars figures, they are very poseable. That's a big deal to me. So, yeah, the toys factor strongly into why I enjoy Joe.
I could go on and on about the reasons (mostly sub-divisions of what I already covered), but I'll spare you guys. I've rambled on enough for one day.

The nostalgia of it.
It is good innocent fun.
Sort of a challenge to get everything.
Lots of fun reasons but the nostalgia factor is number one.
