The WWII Naval Combat Demolition Units (NCDUs), the predecessor of the UDTs and the later SEALs, generally operated as 6-man teams. The guiding principle behind this was practicality more than anything... six guys and their equipment was pretty much the most that could fit in the era's small inflatable boats. The UDTs were later organized into 12- or 13-man assault teams (which could be divided into two smaller elements of six/seven men, led overall by an officer). I'm assuming that units would go back and forth between the 12-/13-man UDT assault team structure and the dedicated 16- to 20-man SEAL platoon as dictated by operational requirements, because there was a lot of overlap in personnel and function between the UDTs and the SEALs until 1983 (when the remaining UDTs were finally re-flagged as SEAL units) although AFAIK, nominally, SEALs have always been organized into platoons since their inception in 1962.
Keep in mind that the functional concept of a SEAL platoon is slightly different from an infantry platoon like you'd find in the Army or in the Marines. In terms of organizational flexibility, a SEAL platoon's sub-platoon element composition is rather fluid (it isn't as strictly tied to the fireteam-squad-platoon hierarchy as infantry platoons due to any number of reasons).
